Avocado and Feta Cucumber
Rolls- Super healthy, fresh, delicious,
crunchy and a fancy appetizer stuffed with incredible avocado, basil and feta
cheese.
If you’d
like to make your diet healthier by adding more vegetables to your meals,
cucumbers are a great choice. There are many ways to enjoy cucumbers such as
raw in salad or in vinegar-based salads. If you're looking for something
different then Cucumbers Rolls would be an ideal dish. Cucumber Rolls are
perfect as a snack or a fancy party starter/appetizer.
I’ve never
had Cucumber Rolls before making this recipe, but now I love them,
Cucumber Rolls are perfect for low carbs lifestyle and a delicious pleasure for
the people who are a little health conscious. These rolls are made with fresh
cucumber, basil, feta and creamy avocado spread. The combination provides a lot
of health benefits as well!
Cucumbers are
low in calories and high in fiber, which makes them useful for weight loss and
digestive health. Cucumbers are made up of mostly (95 percent) water, which
means eating them on a hot summer day can help you stay hydrated.
Avocado is
incredibly nutritious fruit. It is packed with Vitamin K, Folate, Vitamin C,
Potassium, Vitamin B5, Vitamin B6, Vitamin E and contains a wide variety of
nutrients. Avocados help to reduce Cholesterol level and Triglyceride also.
Basil contains
anti-inflammatory and anti-bacterial compounds. It also regulates blood sugar
levels and fights cancer.
Feta is
a rich source of calcium and contains less calories and fat than most other
cheeses.
These
Cucumber Rolls give you different flavors all in one bite. They look very
elegant and the recipe is super quick to make.☺

Prep
time: 15 minutes
Ingredients:
2 large
cucumbers
1 ripe
avocado
½ cup feta cheese
4 to 5 fresh
basil leaves, finely chopped
1 tablespoon
olive oil
1/2
tablespoon freshly squeezed lemon juice
¼ teaspoon
dried oregano
¼ teaspoon
black pepper powder
¼ teaspoon
salt
5 pitted
olives or cherry tomatoes for garnishing
5 Toothpicks
How
to cut cucumber slices:
It will be
good if you grab more cucumbers than you need for this recipe as some pieces
could break. You can use only the middle part.
Wash and dry
the cucumbers.
With a
vegetable peeler or metal cheese slicer, slice the cucumber lengthwise into
long thin strips. (About 2 millimeters thick)
Be careful
that they don’t break. (Very thin or broken pieces can be used for salad or
eaten up).
Place the
slices on a paper towel while the filling is prepared.
How
to prepare dressing:
In a small
bowl whisk together olive oil, lemon juice, black pepper, salt, oregano and
finely chopped basil leaves. Or, alternatively you can shake the ingredients
together in a small jar with a tight-fitting lid.
Whisk/shake
vigorously until olive oil and lemon juice blend into one. (It will take about
one minute)
How
to prepare Filling:
Place the
feta cheese in a medium bowl.
Use a fork
or your hands to break up the feta cheese into very small pieces.
In a
different bowl mash all the avocado pulp until it becomes smooth and creamy.
Now add the
avocado cream and all the dressing into crumbled feta cheese.
Mix it
properly using a fork and the filling is ready.
How
to make rolls:
Lay out each
cucumber slice and spread a layer of the filling evenly on each cucumber slice.
Start
rolling from one side until you reach the end.
Be sure to
have some spread at the end, it will act like glue to seal them up at the end.
Secure roll
with a toothpick and garnish by attaching a pitted olive or cherry tomato with
toothpick.
Repeat the
process with remaining cucumber slices.
Serve
immediately, if not serving immediately then keep them chilled until ready to
serve.

Note:
You can
garnish the rolls with paprika or black sesame seeds as well.
In summers,
you can serve these rolls on a bed of lettuce for a light lunch also.☺
