Watermelon Feta Lasagna- Sweet and juicy watermelon sheets layered with feta cheese, fresh basil, walnuts and simply dressed with olive oil and lime juice.
Nothing says
summer quite like a juicy and sweet slice of chilled watermelon. Eating the fruit raw is a perfect way to
taste the summer, but you can also be a little creative with your summer fruit
and do something fancy like this fruit lasagna.☺
This recipe
with watermelon, feta and basil is perfect for low carbs lifestyles and for
those on diets or weight management programs. The combination provides a lot of
health benefits as well! Watermelon is 92% water by weight. It’s also packed
with vitamin A, B6 and C and is a great source of Lycopene, a powerful
antioxidant that helps in fighting heart disease and cancer and also great for
your vision.
Basil contains anti-inflammatory and
anti-bacterial compounds. It also regulates blood sugar levels and fights
cancer.
Feta is a rich source of calcium and contains
less calories and fat than most other cheeses.

Ingredients:
6
rectangular chilled watermelon sheets
1 cup feta
cheese
10 to 12
fresh basil leaves
2 tablespoon
extra-virgin olive oil
2 tablespoon
lemon juice
1 pinch black pepper powder
¼ teaspoon chilli
flakes
8-10 roughly chopped walnuts
Pinch of
salt
Fresh whole
basil leaves and walnuts for garnishing
Watermelon sheets:
If you are
using a whole watermelon, cut it in half lengthwise first.
Then cut 6 rectangular sheets out of it, dis card the cover.
Remove all
the seeds from the sheets.
Store in the
fridge for at least 10 minutes.
How to prepare dressing:
In a small
bowl whisk together olive oil, lemon juice, black pepper, salt, chilli flakes
and finely chopped basil leaves. Or, alternatively you can shake the
ingredients together in a small jar with a tight-fitting lid.
Whisk/shake
vigorously until olive oil and lemon juice blend into one. (It will take about
one minute)
How to prepare filling:
Place the
feta cheese in a medium bowl.
Use a fork
or your hands to break up the feta into small pieces (do not mash).
Add crushed
walnuts and ¾ portion of dressing into crumbled feta cheese.
Leave ¼
portion of dressing for later use.
Mix it
properly and the filling is ready.
Layering Process:
Place one
watermelon sheet.
Now spread 1
to 2 tablespoon of the feta walnuts filling evenly.
Place
another sheet of watermelon and again spread 1 to 2 tbsp of the feta walnuts
filling evenly.
Place the
last sheet of watermelon and finish off with sprinkling remaining dressing and
some pepper powder on to the top.
For
garnishing, place basil leave and walnut onto the top of watermelon sheet.
Watermelon
lasagna is ready to serve.

This recipe
is best prepared just prior to serving.
It’s up to
you; you can use only two sheets as well.
