is one of those dishes that instantly make you feel better in winters☃!! It’s
amazing about a bowl of piping hot soup as it reaches your belly it make you feel
warm inside out in this cold weather. Being a fan of soups, I am happy that
Soup season is ON!!😊 So today I have a very simple, nutritious and delicious
soup recipe.
Broccoli & Carrot Creamy
Soup- This soup is full
of nutrients that will feel you energized. It's such an easy way to get a nutritious
food that takes only 30 minutes to make. The nutritional benefits of broccoli
make broccoli soup a healthy choice as a regular menu item.
Green
vegetables🌿are a good source of iron which is needed to make red blood cells
and carry oxygen around your body. Nutrients deficiency can weak your immune
system and leave you feeling fatigued. If you're a vegetarian/vegan then green
veggies🌿are your best friend and you should try and include a variety of them
in your diet.
On
top of this, Broccoli is really rich in vitamin C, dietary fiber, vitamins,
minerals and anti-oxidants; it is highly beneficial to skin. It is packed with
soluble fiber that draws cholesterol out of your body. It also contains
glutathione, which is known to enhance the immune system. A cup of broccoli
contains the essential amount of protein needed for a healthy diet. Broccoli
even has significant amount of omega 3 fatty acids, which are well known as an
anti-inflammatory. It is a very important food when it comes to weight loss, so
if you’re trying to lose a few pounds, broccoli soup can be a very effective
addition to the menu.
Carrots
are very good for your eyes and skin. They help slow down the aging of cells.
They contain high level of beta-carotene, which is converted into vitamin
A in the liver. Vitamin A and antioxidants protect the skin from sun damage.
Deficiencies of vitamin A cause dryness to the skin, hair and nails. Vitamin A
prevents premature wrinkling, acne, dry skin, pigmentation, blemishes and
uneven skin tone.
Celery
is an excellent source of antioxidants and vitamins and minerals such as
vitamin K, vitamin C, potassium and vitamin B6. It has cholesterol-lowering
power that makes it useful for improving or maintaining heart health.
I
like my broccoli soup to be healthier so I replaced any heavy cream or cheese
or potatoes with carrots. Broccoli, carrots, and onions when pureed, creates a
deliciously creamy and smooth texture that doesn’t need any cream or plain
floor. I have also replaced butter with olive oil.
So No cheese, No cream, No butter, No flour....So healthy, so easy, yet so
yummy!!😋😋
Broccoli
& Carrot Soup is super easy to prepare and can be prepared in less than
half an hour. It's perfect for when you need some comfort food quick. This
healthy soup makes a delicious and satisfying lunch when served along with
toasted bread🍜

Ingredients
1 whole fresh broccoli
1 medium onion
1 medium onion

clove garlic (optional)
2 medium carrots
1 celery rib
2 tablespoon olive oil
2 cups milk
2
teaspoon salt
½ teaspoon mixed herbs
½ teaspoon black pepper powder
Instructions:
Peel
and roughly chop garlic and onion. Roughly chop the celery. Wash,
peel and roughly chop the carrots. Wash
and cut broccoli head into florets and broccoli stem into small pieces. Do not
throw the broccoli stems they are very nutritious.
Heat 2 tablespoon olive oil in a pan; soften the onion, garlic and celery for about
2 to 3 minutes.
Add
the carrots and broccoli. Stir in 1½ cup water, salt and pepper.
Bring
to a simmer, cover and cook for 5 to 10 minutes or until vegetables are very tender.
Remove
the pan from the heat and let it cool.
Blend
the soup in a blender until it become smooth.
Pour
back into the same pan and heat up.
Add
2 cups milk if the soup is too thick then u can always add more milk. Stir
well.
Season
with dried mixed herbs and cook further for 5-10 minutes until thick.
Switch
off the flame and pour the piping hot soup into the serving bowls.
Sprinkle
few croutons and black pepper onto the top of soup just before serving.

- Cut the bread into small cubes.
- Heat the oil in a large skillet or frying pan over medium-high heat.
- Add the bread cubes to the pan, sprinkle 1 teaspoon salt, and toss the cubes to coat with the oil.
- Try to arrange them in a single layer so that they can turn brown evenly on each side.
- Toast the bread cubes, tossing occasionally until they are golden-brown on all sides. It will take around 5 minutes.
- Remove the pan from the heat. Taste and season with additional salt if needed.
