Tomato & Carrot Soup- A
creamy dreamy delicious and comforting soup made from scratch!
Nothing can be better than a bowl of hot soup on a cool day. I love so many different kinds
of soups, but Tomato & Carrot Soup is my all time favorite. And I think that
this would be one of the most loved soups by everyone. This creamy textured
soup is excellent for all weathers. I love that this is a recipe I can enjoy
year round. It is exactly what you want after a long day at the office or
during cold weathers.
This soup is one of the most commonly made in India. I have used fresh tomatoes and carrots along with some onion, ginger and garlic in this recipe and flavoured with bay leaf, black pepper and mixed herbs. Instead of butter I have used olive oil.

This
delicious and healthy soup tastes tangy and slightly sweet. Instead of using a
lot of sugar to cut the acidity of the tomatoes I opted to use only 1
tablespoon sugar as carrots add their natural sweetness to the soup. Carrots
really help in balancing out the acidic taste of tomatoes.

Ingredients
4
medium Tomatoes, roughly chopped
2
medium sized Carrots, roughly chopped
2
cloves Garlic, roughly chopped or crushed
1
medium sized Onion, roughly chopped
½
inch ginger, roughly chopped
½
teaspoon black pepper powder
½
teaspoon dried mixed herbs
1
tablespoon light olive oil or butter
2
teaspoon salt or as per taste
1 teaspoon Sugar
1 Bay leaf
1 teaspoon Sugar

Some fresh
coriander leaves for garnishing

cup water
Process:
Wash
tomatoes and carrots first. Now roughly chop the tomatoes. Peel and roughly cut
the carrots. Peel and roughly chop the onion, garlic and ginger.
Heat oil or butter in a pan on medium flame; add bay leaf, onion, garlic and ginger. Saute until translucent.

Add
1 cup water and cook for 5 minutes covered with a lid.
When
carrots are half cooked, add tomatoes and give it a good mix. Cover and allow simmering
for 10 minutes.
Remove
the bay leaf and discard.
Now
strain the pureed mixture into the pan using the ladle to push soup through the
screen, straining out all the skin and seeds of tomatoes. Do not skip this
step!
Now
adjust the consistency, if the mixture is too thick then add more water or
vegetable stock.
Check
the salt. Simmer for five more minutes.
