Yes, I have
become a huge fan of Chia Puddings recently. I have shared my 'Banana Pie Chia Pudding' and 'Yoghurt Chia Pudding with Raspberry Puree' earlier this year. Today I’m sharing another fabulously delicious and
nutritious chia pudding recipe that you can make in advance for a quick breakfast
on the go. And I am positive that you are going to love it. I am planning to
share few more interesting chia pudding recipes very soon.
This Golden
Milk Chia Pudding is such a healthy and refreshing breakfast or a snack that is
packed with nutrients! You’ll love how simple this recipe is. It requires only
few ingredients to make. The heart of this recipe is turmeric. Turmeric is a beautiful,
fragrant, yellow Indian spice that has unique colour, flavor and multiple health
benefits.
Turmeric
milk is all the rage now. And as Starbucks has hopped on the trend of turmeric
latte, turmeric seems to be popping up just about everywhere nowadays. I guess
almost everyone would know that Turmeric is good for health and Golden Milk
tastes delicious. Are you also a fan of the entire buzz behind “Golden Milk”?
If not, let’s introduce you to this newest food trend. It’s totally worth all
the hype!
I’ve been consuming
turmeric powder since my childhood, mostly in savory Indian recipes and in
turmeric milk (haldi wala doodh). It’s been known as a “healing spice” and used
to help relief from sore throat, cold & flu. Due to its antibacterial and healing
properties it is used to heal wounds and skin Issues. Yes, you heard me right;
it cures both from inside and outside. Traditionally, turmeric milk aka golden
milk comes from Ayurveda practices and medicine in Indian cultures. It’s a
lightly spiced warm milk drink made with turmeric and milk. In India, turmeric
milk is nothing new and you likely grew up with your mom making it for you when
you have a little bit of cold or got injured. Also warm golden milk is soothing
and relaxing before bed so you may get an extra deep night’s sleep.
So why not
make a chia seed pudding using this wonderful golden milk? Yes, there is another
way to enjoy the rich and spicy flavors of golden milk. The idea came to me
when one day I saw this gorgeous jar of pudding on Instagram. The idea is
absolutely genius. I immediately wanted to try it and I am so glad that I
did!
With this
healthy golden milk chia pudding you will get the benefits of chia seeds and amazing
anti-inflammatory benefits of turmeric all in one. Chia pudding is really a
very easy and quick recipe to make. I like to prepare it the night before and
have it ready in the morning to eat for a quick breakfast or save it as a treat
for later in the day. Not only just turmeric this pudding has some more warming
spices like cinnamon, ginger, black pepper, cardamom and a little sweetener
like honey, which all together make this pudding more comforting and healthy. The
warming spices are perfect for this time of the year.
Not only
does this breakfast look pretty, but it tastes delicious too. The basic
combination of Golden Milk is simply Turmeric, Cinnamon, Ginger, black pepper and
sweetener. I like to add in some Cardamom also, just for an extra flavour kick.
It takes only 10 minutes to make, and the rest of the work is done in the
refrigerator overnight. All you have to do is combine milk, and Spices in a
pan, simmer for 2 minutes, after cooling down a little bit, mix chia seeds,
sweetener and whisk it up, then let it sit in the fridge overnight! Next
morning, portion it into serving jars, top with your favourite fruits and ta-da!

Nutritious benefits of Turmeric Milk Chia
Pudding-
Curcumin is
the foremost active ingredient of turmeric. It is blessed with a number of
pharmacological properties like anti-inflammatory,
antioxidant, anticancer, cardio
protective, neuroprotective etc.
Chia seeds
add in a boost of Omega 3, fiber, and protein.
Tips for making golden milk chia pudding-
Make this
chia pudding the night before because it requires at least 2-3 hours to get set
in the fridge.
Use any milk
that you like. I prefer the combination
of low fat coconut milk and regular milk.
Don’t skip the black pepper. As curcumin has some issues with its
absorption. Researchers of Oklahoma Medical Research Foundation have investigated
the solubility of turmeric and curcumin after exposure to heat. Combination of black pepper and turmeric
powder increases antioxidant activity in cooking. So don’t skip black
pepper in making Golden Milk as the active ingredient in black pepper, called
piperine increase the bioavailability of curcumin.
I use honey
to sweeten my pudding. You can use maple
syrup, sugar, coconut sugar, dates or any sweetener of your choice or even leave
the sweetener out completely.

Servings- 4
Course- Breakfast / Snacks
Time- 10 minutes
Ingredients-
2 cups
canned low fat coconut milk
½ cup
unsweetened regular milk or Almond milk
½ cup chia
seeds
2-3 tablespoons
honey
1 teaspoon
turmeric powder
½ teaspoon
cinnamon powder
½ teaspoon
ginger powder
¼ teaspoon ground
Cardamom
Pinch of ground
black pepper
¼ cup
unsweetened coconut chips or shredded coconut for garnish
Handful of
fruit of your choice (like strawberries, raspberries, blueberries or bananas)
for topping
Instructions
Step 1-
Over medium heat, in a medium saucepan combine the coconut milk, regular milk, turmeric
powder, cinnamon powder, ginger powder, ground cardamom and black pepper.

Step 2-
Bring to a simmer, whisking until the spices are well incorporated and the milk
has vibrant golden hue, will take 2 minutes. Be careful that the milk doesn't
boil over!

Step 3-
Transfer the golden milk to a mixing bowl and let it cool down until room
temperature.
----------------------------------------------------------------------
Step 4-
Add chia seeds and honey to the golden milk, stir well and cover with lid or
cling film.
----------------------------------------------------------------------
Step 5-
Place in the fridge, and let sit for at least 2 hours, or overnight. Once
ready, the mixture should be thick with the consistency of pudding.
----------------------------------------------------------------------
Step 6-
Give the pudding a good stir to make sure there are no clumps.
----------------------------------------------------------------------
Step 7-
Divide the mixture into four small glasses or bowls.
----------------------------------------------------------------------
Step 8-
Top with unsweetened coconut chips and fruits of your choice. And ENJOY!

Note-
If you don’t
want to add honey then substitute it with maple syrup or any sweetener of your
choice or you can you skip the sweetener completely.
You can substitute
coconut milk with any other nut milk of your choice. (Almond milk would be a
great option).
