with just a handful of ingredients.
Avocados on
toast are easy and delicious for breakfast or for snack, and can be made in
many different ways as per taste and favorite ingredients. These toast have
become my new favorite these days. If you haven’t tasted avocado toast yet, I
would say you’re really missing out! It’s super healthy, nutritious and
delicious and the best part is, it can be ready in less than 15 minutes. In
fact, this recipe is so short and simple that we can hardly call it a recipe,
it’s just you have to combine few ingredients with mashed avocado, spread it on

You can make
it even simpler by using no toppings. Simple Avocado toast also tastes amazing!
This recipe is for avocado toast with roasted cherry tomatoes but the
possibilities are endless. Sometimes you can zest it up by topping it with
sprouts, beans, tomato salsa, jalapenos, spinach & rockets, onions and
radish or pretty much anything you like! For my toasts I normally choose whole
grain & seeded bread as these breads contain more fiber and protein but you
can also use gluten-free or any bread of your choice instead. I am planning to
share a number of breakfast toasts recipes on my blog because there’s nothing
better than delicious and nutritious breakfast 😋😋
These days,
the avocado has become very popular food among health-conscious people.
It’s often referred to as a super food, which is not very surprising as this
fruit is Incredibly Nutritious. It contains Vitamin K, Folate, Vitamin C,
Potassium, Vitamin B5, Vitamin B6 and Vitamin E. Eating avocados can actually lower cholesterol and triglyceride
levels.
It is
usually eaten raw as in smoothies, dessert whip or in salads and on toasts with
little pepper and salt. The most popular use of avocados is in the form of
guacamole, a traditional Mexican and American dip which is also good as a
topping on vegetarian burgers and sandwiches.

Avocados do
not contain any cholesterol or sodium and are low in saturated fat. They are
loaded with Heart-Healthy Monounsaturated Fatty Acids which promotes Healthy
Heart.
They are
packed with nutrients that are beneficial for maintaining healthy skin. It is
also used for nourishing dry and damaged hair.
They contain carotenoids such as lutein and zeaxanthin, which help to protect your
eyes against cataracts, eye diseases and keep them healthy.
Avocados improve
digestion as they are high in fiber also.
Cherry Tomatoes-
Juicy, sweet
and fresh cherry tomatoes are a delicious addition to toasts and salads.
Tomatoes are packed with some fiber but they are best known for their vitamin
and mineral content which includes calcium, magnesium, beta-carotene which becomes
vitamin A when consumed, vitamins C and E, vitamin K.
It’s so obvious now that how healthy these toasts are. Give it a try when the next time
you’re looking for a nutritious breakfast. I am sure you would love and enjoy.
Serve- 4
Course- Breakfast / Snack
Time- Less than 15 minutes
Ingredients-
2 ripe and
fresh avocados
1 tablespoon
lime juice
1 teaspoon
dried parsley or freshly chopped parsley leaves
1 teaspoon
finely chopped coriander leaves
1 teaspoon
finely chopped green chilli (optional)
1 teaspoon
chilli flakes
Pinch of
black pepper power
Salt to
taste
8-10 cherry
tomatoes cut in halves
1 tablespoon
extra-virgin olive oil
4 slices of whole
grain seeded bread or any thick bread of your choice
Process-
First of all
preheat the oven to 180ºC. Place the tomatoes halves cut-side up on a baking
tray, season with salt and drizzle some olive oil. Roast until they are slightly
dried out.
Meanwhile if
you have a toaster then its simple toast the bread slices in it. But if you
don’t have then- Put a pan on medium flame, drizzle some olive oil or butter on
the bread slices and place them on the pan, toast them on both the sides until
dark brown and crispy. You can toast them into oven as well.
Cut the
avocado in half and carefully remove its seed then scoop out avocado pulp into
a bowl.
Squeeze in
the lemon juice then gently mash with a fork.
Add sea salt, black pepper, dried parsley, chopped coriander leaves, finely chopped green chilli, some chilli flakes and combine all together until well mixed and slightly chunky.

Generously spread
avocado mixture onto each piece of toast and top with roasted tomatoes.
Sprinkle with some pepper flakes, dried parsley and serve!
