and nutritious chia pudding loaded with banana and coconut flavours!
Banana Pie
Chia Pudding is super healthy, nutritious and very easy to make. It is loaded
with banana and coconut flavours. It can be enjoyed for a healthy breakfast, snack
and dessert or even in lunch if you really want! It’s that versatile.
Last year, I
shared ‘Yoghurt Chia Pudding with Raspberry Puree’ recipe, it tastes amazingly
delish! And for that I got very good response from all of you. So I decided to
share few more Chia Pudding recipes on my blog. There are a number of
variations for Chia Pudding. Today I am sharing Banana Pie Chia Pudding recipe.
For this recipe you need only a handful of ingredients and a bowl to make
pudding! It’s one of my favourite ways to enjoy chia pudding. It tastes
incredibly yummy, satisfying, smooth and full of flavours. And, honestly what
could be easier than chia pudding?

All you have to do
is to mix the chia seeds with the milk, sweetener, and flavorings of your choice
in a bowl and let the chia pudding chill overnight or for few hours to thicken.
It’s so damn easy and delicious and the most important thing is its very
nutritious.
For this recipe, I use a mix of coconut milk and almond milk. This gives it rich and creamy texture, but on the lighter side. Full-fat canned coconut milk is great if you’re looking to increase the creaminess and make a really filling breakfast, snack or dessert out of the chia pudding. You can use any type of plant-based milk as per your preference. I am using store bought almond milk, you can use homemade almond milk also and it works great! If you’re looking for a very rich & creamy chia pudding, you can go ahead with only coconut milk.

Chia Seeds
start absorbing the liquid very quickly. After soaking for few hours in liquid,
chia seeds create a gel like texture. I usually add the milk, give it a good
stir then let it sit for 5-10 minutes then again give it another stir to make
sure there is no clump. And then let it sit in the fridge for an hour or two. But
if you’re in a rush you can eat it within 30 minutes or so, it might be a
little liquidy. Another great option is to make it the night before you want to
eat it and let it sit in the fridge overnight.
Now let’s
talk about toppings. Chia seeds have no flavor so the pudding will taste like
whatever liquid, flavourings and toppings you’re using. I like topping my chia
puddings with fresh fruit or dried fruit, nuts, shredded coconut, seeds,
granola, cereals and so many more toppings. This one I topped with coconut
chips, chopped banana and finished with a light sprinkle of cinnamon powder;
which adds gorgeous looks and amazing flavour to the pudding.

Total Time- 2 hours 10 minutes
Ingredients-
¼ cup chia
seeds
½ banana,
mashed
½ cup
full-fat coconut milk
½ cup almond
milk
2 teaspoons
honey
1 teaspoon
cinnamon powder
1 tablespoon
coconut flakes
1 banana,
chopped
Step 1- In
a medium bowl, mix together coconut milk, almond milk and cinnamon. And sweeten the
mixture with honey.

Step 2- Now
add Chia seeds and mashed banana. Whisk until well combined. There should be no
clumps.

Step 3-
Cover the bowl and place it in the fridge for 2 hours or overnight to firm up.

Step 4- After
two hours or in the morning, give the mixture a good whisk again to evenly
distribute Chia seeds that have settled on the bottom.

Step 5- Now serve the chia puddings into 2 serving
bowls or cups and topped it with chopped bananas and coconut chips.

Step 6- Lastly sprinkle some cinnamon
powder on to the top. Banana Pie Chia Pudding is ready to dig in!
