Watermelon Feta Wedges

Watermelon Feta Wedges- Sweet and juicy watermelon wedges loaded with feta cheese, walnuts and fresh basil and then simply dressed with olive oil and lime juice. 

Eating the fruit raw as it is perfect way to taste the summer, but you can also be a little creative with your summer fruit and do something fancy like these Watermelon Feta Bites. And when it comes to the summer fruit, nothing says summer quite like a sweet and juicy slice of chilled watermelon. These refreshing watermelon & feta wedges with basil are a perfect appetizer for summer.  This sweet salty and tangy combination looks fancy and beautiful enough on your table for a BBQ party, small get-together, or even a potluck!

One of my friends introduced us to this amazing flavour combination, and now we are hooked. The saltiness of feta cheese is the perfect compliment to the sweet watermelon, and the citrus lime basil dressing really adds the perfect punch, It’s like they are made for each other. When you taste this watermelon feta wedges, you will feel like a soothing music of Greek flavours into your mouth. The sweetness & juiciness of watermelon, saltiness & creaminess of feta, nuttiness of walnuts and the freshness & tangy punch from lime dressing, all just sing together into your mouth. The flavour is very unique. For me it was like ‘Love at first bite’. I literally fell in love with this amazing appetizer immediately after having one bite.

Couple of weeks ago we had some friends over dinner. The weather was amazing, it was just starting to warm up, so we decided to put these refreshing Watermelon Feta Wedges into our starter menu. And they were a big hit. Of course they had to be; Well, in Joey’s words… these bites are Tasty: Yes, Healthy: Yes, Refreshing: Yes, Beautiful: hell Yess!, So what’s not to love about. There is another BBQ party at one of our friend's backyard, and guess what! This appetizer won everyone’s heart last time this much that they want it again. So I am going to create these beauties once again on coming weekend. And I’m guessing it will be making its regular appearances on our summer party menu. It's an amazing 'pick me up' appetizer and totally worth making and sharing!

This recipe is perfect for low carbs lifestyles and for those on diets or weight management programs. The combination provides a lot of health benefits as well! Watermelon is 92% water by weight. It’s also packed with vitamin A, B6 and C and is a great source of Lycopene, a powerful antioxidant that helps in fighting heart disease and cancer and also great for your vision.

Basil contains anti-inflammatory and anti-bacterial compounds. It also regulates blood sugar levels and fights cancer.

Feta is a rich source of calcium and contains less calories and fat than most other cheeses.

Course: Appetizer, Salad

Cuisine: Greek

Servings: 8

Prep time: 30 minutes

Ingredients:

8 chilled watermelon triangle wedges

1 cup feta cheese

10-15 fresh basil leaves

2 tablespoons extra-virgin olive oil

4 tablespoons lime juice

1 teaspoon honey

1 pinch freshly grounded black pepper

¼ teaspoon red chilli flakes

8-10 roughly chopped walnuts

Pinch of salt (don't add too much as feta cheese is already salty)

Fresh whole basil leaves and walnuts for garnishing

Watermelon triangle wedges:

Step 1. If you are using a whole watermelon, cut it in half lengthwise first. Now you have two halves.

Step 2. Place both the halves face down on the pulp sides and with the rind facing towards you. Cut them into half again lengthwise. At this point, you should have 4 quarters.

Step 3. Now slice the quarters into 1-inch broad wedges, while cutting these slices, the watermelon should still be on the rind. (Its easier to pick with the rind on)

Step 4. Remove all the seeds from the wedges and store them in the fridge for at least 10 minutes.

How to prepare dressing:

Step 1. In a small bowl whisk together olive oil, lime juice, honey, black pepper, salt, red chilli flakes and finely chopped basil leaves. Or alternatively you can shake the ingredients together in a small jar with a tight-fitting lid.

Step 2. Whisk/shake vigorously until olive oil and lemon juice blend into one. (It will take around one minute)

How to prepare filling:

Step 1. Place the feta cheese in a medium bowl, Use a fork or your fingers to break the it into small pieces (do not mash).

Step 2. Add roughly chopped walnuts and pour ¾ portion of the prepared lime- basil dressing over crumbled feta cheese. Leave ¼ portion of dressing for later use.

Step 3. Mix everything gently and the filling is ready.

Assemble the wedges:

Step 1. Arrange all the chilled watermelon wedges on a serving plate or tray.

Step 2. Now spread 1 to 2 tablespoon of the feta-walnut filling evenly over all the wedges.

Step 3. For garnishing, place basil leave and walnut halve on the top. Or decorate as per your style. You can also sprinkle over some white or black sesame seeds.

Step 4. Drizzle over the remaining dressing over your loaded watermelon wedges and sprinkle some black pepper. And your Watermelon Feta Wedges are ready to serve. Enjoy!

Recipe Note:

This recipe is best prepared just prior to serving.

You can serve it as a salad as well, just cut the watermelon into small pieces and mix them with the filling.
